When our youngest son was in 4th grade they not only had to write about their family history country of origin, they had a fair of sorts. Each one was to fill a trunk full of items representing the country, dress in costume and prepare a dish also representing the same. On History Fair day all the families came to see what the children had prepared. My husband is half Irish and half Native American (Blackfoot on his dad’s side, Cherokee on his mom’s). My family history is a wide variety and not as much detail known. We gave our son a choice and he chose the Irish. My son and husband researched and chose this Irish Potato Soup to serve at the fair. There are so many ways of preparing potato soup and both my mother’s and father’ family had there traditional recipe, I love both, but this Irish style is different than any I had tasted before and we have it often in cold weather. The guys really love the added bacon.
I like to shave a little bit of carrots into the pot after adding the water, but Charles used all of them in the Venison Stew that he was making at the same time. We often cook two meal like this at the same time, so we have a variety to choose from on days we don’t have time to do as much cooking.
