Oven Baked Chicken

  • Small whole Chicken
  • 3 Pats of Butter
  • Salt
  • Pepper
  • Garlic to taste

Line baking sheet with foil leaving enough foil on each end to pull up and make a tent over the chicken. Coat the chicken with butter and then sprinkle the next three ingredients on. Pull the foil up to make a tent without touching the top of the chicken. This way the seasonings will cook into the chicken. Then fold the foil so it stays closed, holding the moisture in. Bake slowly at about 190 degrees for about 2 1/2 hours, taking the chicken out of the oven and basting with the dripping every 15-20 minutes. This keeps the chicken from drying out. The last 20 minutes turn the oven up to 325 with the chicken uncovered to brown it.
