Pickled Beets

Ingredients:

  • 12-15 boiled eggs
  • Three cans of beets-I prefer organic if store bought
  • 1 cup of sugar – I prefer Organic
  • 1 cup of vinegar – I use everyday white vinegar

First boil and peel the eggs placing them in a large container. Make sure the lid will seal tightly. Next add one can of beets including the liquid. This helps the next ingredient, sugar, dissolve better. Pour the sugar gradually across all of the eggs. Do the same with the vinegar, which also helps the sugar dissolve. Now add the rest of the beets along with the liquid. Now seal the lid tightly and shake for several minutes until the sugar is completely dissolved. Last but not least place the beets in the refrigerator and leave over night.
