Stir Fried Pepper Steak

Fresh Bell Peppers

This recipe is very adaptable. The steak can be replaced with chicken or pork loins. Herbs and spices can also be changed to your preferences. If you are not crazy about onions, you can use fresh mushrooms. Sometimes I add all three. The main idea here is to be able to use what you have on hand and not have to run out and buy one or two ingredients.

MARINADE INGREDIENTS:

  • Steak cut in strips
  • 2 Tablespoons Lemon juice
  • 2 Tablespoons Olive oil
  • Garlic to taste
  • 1 Teaspoon Oregano
  • 1 Teaspoon Turmeric
  • Pepper to taste

Marinate these ingredients overnight. If you forget you can still do it early in the morning and it will be ready for your evening meal. Herbs and spices can be added or left out according to your taste.

STIR FRY INGREDIENTS:

  • Marinade from above
  • 1 large onion
  • 2 or more sweet bell peppers depending on size

Using a large skillet or wok, add marinated steak to skillet. If using a wok, you may want to add just a bit of oil first. Top with sweet peppers and onions and add more of herbs as desired. Cook at a medium heat, stirring frequently until steak, peppers and onion are done to taste. I prefer the freshly add veggies to still be almost a little crunchy and the steak medium. If you like it more well done you can cook the meat a little bit before adding the vegetables. Serve hot.
